The efficacy of chewing gum is probably due to the effect of salivation, combined with the cleansing effect of mastication.  Any gum will do, but it should be sugar free gum for your teeth's sake.

Chewing gum has its downsides. Firstly, excessive chewing can cause distress for your Temporo-mandibular Joint, leaving you with a sore jaw.  It is also thought that chewing gum gets your stomach all excited and prepared for food, possibly leading to stomach problems.  To avoid these problems, you should chew gum for a minute or two at a time.
